Owner Jeremy Perkins believes the judges recognized his coffee’s unique blend of cherry, almond, tropical fruit flavors, and a hint of chocolate. While he noted the judges’ comments were unavailable during his interview with PQB News, he finds validation in his work through such accolades. As a self-employed individual, Perkins values feedback that reinforces the quality of his coffee.
The process utilized in his winning coffee is the co-ferment technique, which involves anaerobic fermentation to enhance coffee’s natural characteristics with added ingredients like cherry powder. This method requires careful timing, with fermentation durations ranging from 48 to 72 hours before the cherries are dried and removed.
Perkins was taken aback when “French Press Coffee Roasters – U.S.A” was announced as the gold medalist, due to ongoing trade tensions between Canada and the U.S. He expressed disappointment, wishing to see “Canada” highlighted instead but noted that the event hosts apologized as he took the stage.
Having participated in various coffee-related events across countries including Ethiopia and Honduras, Perkins has a wealth of experience. He has previously won a gold medal at the Golden Bean Americas in 2019 and expressed that advancements in coffee preparation are substantial. Perkins finds that his past winning Ethiopian blend would likely not succeed today due to evolving standards.
Perkins has also engaged in trade missions to strengthen international coffee trade relations, such as his recent trip to Honduras. Here, he interacted with local farmers, tasting their coffees and discussing import opportunities to Canada. With 24 years in specialty coffee, Perkins began his journey in the UK through coffee shops and roasting. Additionally, he has served as a judge in barista championships in both the UK and Canada, continually learning and evolving in the coffee industry.
