This venture is led by new franchisees Katie and Tom Matthews, with the sandwich shop debuting soon at 9720 S Rainbow Boulevard. The couple aims to bring a piece of their Bay Area roots to Las Vegas, where they felt a strong desire for Togo’s presence as there are few locations in the city.

After relocating to Las Vegas, the Matthews couple noticed a lack of Togo’s franchises and decided to initiate the process of launching three locations in the area, starting with the one on Rainbow Boulevard. They plan to open additional sites, particularly mentioning the Centennial Hills region, although specific future locations have yet to be disclosed.

Glenn Lunde, CEO of Togo’s Eateries, expressed enthusiasm about the Matthews joining the franchise, stating, “I am confident that with their passion for excellence, our third location in Las Vegas will continue to deliver on Togo’s brand promise of providing the best hand-crafted sandwiches.”

Togo’s offers a diverse sandwich menu categorized by protein, with options including Pastrami & Roast Beef, Cheesesteaks, Hot Chicken, and Turkey. Katie Matthews specifically recommends the 24, Turkey & Avocado, while Tom Matthews favors the 9, Hot Pastrami, highlighting the quality and portion value of their offerings.
