The Taste of Morocco food festival at Novotel Airport was an unexpected delight, showcasing the vibrant, rich flavors of Moroccan cuisine. Curated by Head Chef Amanna Raju, the festival runs every Saturday until June 28, just in time for the monsoon’s arrival, offering a warm culinary escape. Attendees can expect a lavish feast filled with bold spices and comforting textures that truly embody the spirit of Morocco.
Kicking off the meal, we were treated to an assortment of three refreshing salads. A crunchy medley of green vegetables, a tangy fish salad, and a standout dish featuring khus khus (poppy seeds) offered a surprising burst of flavor that set the mood perfectly. Next up was Shorba ma Sherwja, a traditional Moroccan soup packed with grilled chicken, ideal for the rainy season. It was hearty and comforting — just what you want when the weather turns gloomy.
Then came a fun platter of fresh spreads, including Hummus, creamy Labneh, and smoky Muhammara, all served with both baked and fried pita bread. The experience was interactive, with guests tearing the pita and enjoying the various spreads, making it not just a meal but a culinary adventure. Chef Raju’s company made the time fly by, and before we knew it, the plate was emptied amidst lively conversation.
As for the star of the festival, we found the chicken marinated in exotic Moroccan spices to be a standout. This dish was bursting with flavor and absolutely worth a try. Following it were satisfying portions of chicken and paneer shawarmas alongside crispy falafels that were surprisingly filling. The restaurant served large portions, enough to leave one pleasantly replete after just a small helping.
For those with a sweet tooth, the festival wraps up with a selection of traditional desserts. We indulged in Baklava, a moist Basbousa, and Mahalabia, a subtle milk pudding that perfectly concluded our meal. They managed to strike that perfect balance of sweetness, providing just enough to pair with the rich dishes without overwhelming the palate.
Chef Amanna expressed his vision behind the festival, “Moroccan cuisine is a mosaic of Mediterranean freshness, Berber soul, and Arabic depth. We wanted to bring these bold and comforting flavors to Hyderabad and help people connect with the spirit of the cuisine.” He emphasized the importance of community experience, stating that they built in live food stations so guests could tailor dishes to their taste. “It’s more than just a meal; it’s a celebration of food, family, and shared moments.” It seems the Taste of Morocco food festival promises more than just a dining experience; it’s a joyful gathering of culture and cuisine.
