Peruvian Cuisine: A Rich Culinary Crossroad

The festival will highlight unique dishes that celebrate the fusion of indigenous Incan and colonial Spanish elements, intricately woven with influences from immigrant groups such as the Japanese, Chinese, and Italians. Key ingredients in these culinary masterpieces include an array of fresh fish, myriad types of potatoes, chicken, beef, quinoa, and legumes, all spiced to perfection with distinctive Peruvian chili peppers. Some standout offerings include timeless classics such as ceviche, pollo a la brasa, and lomo saltado, alongside refreshing drinks like pisco sours and chicha morada.

Chefs participating in the festival bring with them a wealth of experience. Abel Ortiz runs Chullschick in Hong Kong and has played a massive role in popularizing Peruvian cuisine there. Franco Aldana, who heads Feliz in Kuala Lumpur, has trained at top culinary schools and gained invaluable experience in esteemed kitchens. Rubén Rodrigo Serrano of DIP Nikkei in the Philippines expertly blends Japanese and Peruvian culinary styles, while Pier López from Yunka Nikkei in HCM City showcases savory dishes influenced by Japanese flavors paired with traditional Peruvian cooking.
